Executive Chef Michael Jacobson joined the staff at Wyndham Hotels of Galveston in May 2012 working as executive sous chef initially at The Tremont House and at Hotel Galvez. He was named executive chef of The Tremont House in December 2012. Jacobson has nearly 30 years of professional experience in culinary arts and food service. His interest in culinary arts began in Littleton, CO in the high school culinary program.
He spent 25 years working in Lake Tahoe, CA including fourteen years at Harrah’s Lake Tahoe as well as owning three of his own restaurants. Jacobson also worked briefly as a culinary arts instructor in Omaha, NE as well as at other restaurants in various roles. Prior to Galveston, he was executive sous chef and pastry chef at Edgewood Tahoe in Stateline, NV. In his spare time, Jacobson is pursuing a degree in visual and performing art specializing in guitar. In addition to overseeing the menu at the hotel’s Tremont Café, he oversees all meal preparation for all special events and banquets, weddings and room service.

Who taught you how to cook?
About a 1,000 different people but most importantly David Goodwin, Paul Lee, and Steven Kline taught me to be a chef and leader. I worked with these talented chefs during my time at Harrah’s in Lake Tahoe.
What is the most important tool to have in the kitchen?
The most important tool in the kitchen is a good chef’s knife. I use a Henckel 8 inch chef’s knife.
What is your favorite item on the menu at Tremont Café?
Each and every one but I also love Sunday Brunch at Hotel Galvez.
If you could only prepare one final meal, what would be on your menu?
I would serve polenta, wild morels and asparagus.
Who is your role model for cooking?
There can be only one - Julia Child.
What advice do you have for aspiring chefs?
Go to school, pay attention and be ready to work your tail off.
What are your favorite spices?
Chili Peppers, Cumin, Black Pepper, Kosher Salt
What is your favorite dish to prepare at home?
I love to make yam and banana soufflé at home.
